Nectarine and Chia Pudding
A great summer recipe when stone fruits are in season. This pudding bring the summer vibes with sweet nectarines. You could use mango, peach or any of your favourite fruits. The possibilities are endless.

Ingredients
3 yellow nectarines, peeled and diced
1 tablespoon water
3/4 cup organic yoghurt (homemade or Barambah Organic)
1/2 cup coconut milk (Coco Quench)
2 tablespoons chia seeds (more if you like a thicker pudding)
1 teaspoon vanilla extract
1 tablespoon raw honey
to serve Paleo granola (e.g. Farmer Jo’s)
Cooking Instructions

Place nectarines and water in a small saucepan and bring to a boil. Reduce heat and simmer for 5-10 minutes or until the fruit has broken down. Allow to cool and refrigerate.

Place yoghurt, coconut milk, chia seeds, vanilla, and honey in a bowl and mix well to combine.

Place the mixture in the fridge to thicken for about 30 minutes, then pour into individual glass jars.

Allow to set in the fridge for 2 hours or overnight.

Top with the cooled fruit and granola before serving.
