Red Lentil Wraps

Red lentils are a great option on the FULL GAPS diet. For those that are missing bread for lunch these lentil wraps are a great option. It is important to prepare the lentils correctly so they are easier for you to digest.

Red Lentil Wraps

Ingredients

3/4 cup (150g) red lentils
1 1/2 cups hot water
1 tablespoons lemon juice, apple cider vinegar or whey (whey will best option to ferment lentils for sensitive individuals)
1/2 tsp salt
1 cup chicken stock or filtered water
Ghee or olive oil for cooking

Cooking Instructions

Rinse lentils in a sieve under running water

Place in a glass bowl and cover with water

Add salt and lemon juice/ACV or whey

Leave to soak/ferment on bench top for 12-24 hours

Strain water & discard

Rinse lentil in a sieve under running water

In a high speed blender or Thermomix add lentils and stock or filtered water

Blitz on high until mixture resembles a smooth batter

Heat a frypan until hot, add oil

Reduce heat to medium low and pour enough batter to create a thin layer on bottom of pan, swirl pan around to coat the pan with batter

Cook 2-3 minutes, flip and cook through

Repeat with remaining batter
